Due Fagiani, polpa (special pizza) or tomato pulp: In this variant, the whole peeled tomatoes are pushed through a sieve and topped with a thick tomato juice. This provides a thick (not spiced) tomato pulp. This production method is mainly used in northern Italy. The name ”Special Pizza” is mentioned as pulp is often used as a base by the real Italian Pizzaiola.
